Culinary enthusiasts were in for a treat at the Sharjah International Book Fair (SIBF) 2024 when renowned chef Godard took center stage with his delightful yet accessible recipe for soufflé. The atmosphere buzzed with excitement as food lovers gathered at the cookery corner, eager to learn from a master in the art of French cooking.

Chef Godard began the interactive demo by simplifying the soufflé-making process. His approach was refreshing, as he emphasized that cooking should be enjoyable and approachable for everyone, including first-timers in the kitchen. The cooking adventure started with him skillfully mixing cornstarch, sugar, and a pinch of salt into milk, whisking it patiently until the blend was smooth. This mixture was then heated, with butter cubes added to introduce richness, while Godard’s expert stirring ensured it didn’t stick to the pan.

But the magic of the soufflé truly began when Godard prepared the chocolate component. He melted chopped chocolate and sprinkled in finely grated orange zest, using its vibrant flavor to elevate the dish. Egg yolks were whisked in next, forming a decadent, flavorful base that would thrill anyone with a sweet tooth.

With the base ready, Godard meticulously greased the ramekins with butter, adding a touch of sugar to create an even coat on the sides and bottom. “Coat them well,” he advised his eager audience, “or your soufflés won’t rise as they should.”

The final touch was the most crucial – whipping egg whites with a bit of sugar until they froth beautifully. This step is what gives the soufflé its cloud-like texture. The whipped whites were gently folded into the chocolate mixture, and soon, the ramekins were filled and placed in a preheated oven at 220°C. Within just ten minutes, the room was filled with the tantalizing aroma of freshly baked soufflés, which came out light and wobbly—a visual and edible masterpiece.

This interactive cooking experience was just one of many highlights at SIBF 2024, which runs from November 6-17 at the Expo Centre Sharjah. The event, celebrating literature and culture, is welcoming over 2,520 publishers from 112 countries and is themed ‘It Starts with a Book’. This year, Morocco is proudly featured as the Guest of Honour, spotlighting the rich literary traditions of the country, while offering a diverse program of 1,357 activities aimed at both children and adults.

In a world where culinary expertise can often feel intimidating, Chef Godard’s demonstration is a reminder that gourmet cooking can be both approachable and delightful. Who wouldn’t want to try their hand at a light, fluffy soufflé, especially after seeing it made right before their eyes?
