This year, the fair takes on an exciting twist, thanks to the introduction of internationally-inspired cuisine brought by new vendors, Kosharina Egyptian Cuisine and Paella Depot. As food lovers flock to the fairgrounds, the rich culinary traditions of Egypt and Spain are making their captivating debut.
Salma Habib, the proud owner of Kosharina Egyptian Cuisine, has fulfilled a long-standing dream by showcasing her culinary heritage at the fair. “The Koshari is a beloved street food in Egypt, blending lentils, rice, and spaghetti topped with a tangy tomato sauce and fried onion,” she explained. The authenticity is evident, as all the kitchen staff hail from Egypt, ensuring every dish reflects genuine Egyptian flavors. A remarkable achievement, Kosharina is the only vendor at the fair representing Egyptian cuisine.
Chef Thabt Mohamed shares the enthusiasm, noting that he has been pursuing this opportunity since 1979. “I’ve applied multiple times, but this year everything just clicked,” he said, while juggling cooking and serving from dawn until late into the night. His passion is palpable as he describes the joy of sharing his cultural heritage through food. “The hard work pays off when you see people enjoying what you prepare,” he added with a smile.
At the same time, Paella Depot is introducing fairgoers to the Spanish staple of paella, a colorful and aromatic rice dish renowned for its vibrant flavors. Owner Doug Huemoeller has been crafting paella for over two decades and dreams of bringing this unique offering to the fair. “After 15 years of trying, we’re thrilled to finally be here,” he said, reflecting on the challenges involved in obtaining a vendor slot. “It’s all about providing something fresh and innovative.”
The demand for Huemoeller’s paella has been overwhelming, requiring him to source specialty rice from Spain to meet the excitement. “We had to fly in more rice overnight to keep up with the demand—from California no less!” he exclaimed, illustrating the commitment to authenticity in his dishes. He emphasizes the importance of adaptability in a bustling fair environment: “Every day brings new challenges, and we adjust our operations based on the previous day’s experience to keep the momentum going.”
Despite the challenges of introducing lesser-known cuisines to fairgoers, both vendors express satisfaction with the warm reception their food has received. “The people here are incredibly nice and welcoming,” Habib remarked. Her enthusiasm is mirrored by Huemoeller: “It’s been an incredible experience, and we can’t wait for the next 12 days.”
